This past year was a great one for me, but it did have a few challenges — The biggest one being a persistent back injury that I was having a really hard time with. This injury really brought my exercise routine to a screeching halt. All of a sudden, I wasn’t able to do Pilates like I used to, and running was out of the question.

As soon as exercise couldn’t be a part of my daily life, I had to make some lifestyle changes and become much more mindful about my diet, and what food I was putting into my body. Not just for my weight, but because I needed to be as healthy as possible if I wanted my back to heal.

The silver lining is that I have discovered so many amazing and nutritious recipes, and now I eat so much healthier than I did before. I have cut out a lot of unnecessary sugar and fat, and have to say that I feel better than ever … Food truly is medicine! It is incredible how much you can influence your body’s health and overall wellbeing by eating nutrient rich anti-inflammatory foods. I have learned first-hand the value in giving your body the tools necessary to fight inflammation through diet.

Today I wanted to share with you guys a roundup of my favorite healthy recipes that I made in the last year on tameramowry.com. I hope you enjoy them as much as I do!

Zucchini Noodle Pasta with Creamy Avocado Sauce — Probably one of my favorite recipes I discovered this year, I absolutely love zucchini noodle pasta. This recipe is made with an avocado sauce that is very healthy and beyond delicious.

Almond + Banana Chia Seed Pudding — Last but certainly not least is this chia seed pudding. It may not look like much, but it is so nutritious and tastes incredible. The almonds on top add great texture to this snack.

My family is BUSY — I’m sure a lot of you guys can relate! Between work, school, activities and commitments, our schedule is beyond packed. Often times, that means that making healthy dinners for my husband and I tend to fall to the bottom of the priority list. Once the kids are fed and taken care of, my husband and I then have to tackle what we are going to eat.

I am however very committed to eating healthy, and I am always on the hunt for recipes that are easy, nutritious and delicious. Recently, I put together these Grilled Chicken and Vegetable Skewers, and I have to say, they turned out so great! The dish is easy to make, tasted fantastic on top of a kale salad, and was super healthy. The skewers are topped with pesto (I used a vegan pesto), which gives the dish amazing flavor!

What I also love about this dish is that you could easily switch up the selection of vegetables (go for fresh seasonal veggies!) and protein to keep it interesting, or to match any dietary preferences or restrictions. Some ideas I plan on trying next are swapping the chicken for beef, and also adding brussels sprouts and artichoke hearts.

Tamera Mowry Grilled Chicken

Grilled Chicken and Vegetable Skewers | Serves 2 | Total Time: 30 minutes

 

Ingredients:

  • 2 large organic chicken breasts, cubed
  • 3 tbsp olive oil, divided
  • 1 cup of broccoli florets
  • ½ a zucchini, cut into 1 inch cubes
  • 1 cup of cremini mushrooms
  • ½ yellow squash, cut into 1 inch cubes
  • ½ cup of pesto
  • Salt and pepper to taste
  • Wooden skewers

Directions:

  • In a large skillet, combine 1tbsp of olive oil and cook your chicken until it is 95% done. Remove from heat and set aside on a plate.
  • Return the skillet to the stove, and add all of your vegetables and remaining olive oil. Cook your veggies until they are tender, but not brown. Remove from heat and set aside on a plate.
  • Assemble your skewers with a mixture of chicken and vegetables and add salt and pepper to taste. Once all your skewers are full, carefully place back into your skillet, and continue to grill them over medium heat. Grill them until both the chicken and vegetables start to brown.
  • Remove from heat, and plate over a salad of your choice.
  • Finally, spoon pesto over top of your skewers and salad as light dressing.
  • Enjoy!

I am always looking for new and healthy dinner options for my family. That’s why I got really excited about coming up with this more nutritious twist on a traditional burrito bowl. I tried to create a recipe that would ditch the rice and cheese elements, and instead use ingredients that were a little better (like arugula and quinoa).

I have to say, this recipe turned out pretty well! The dish is easy to make, and is definitely full of healthy whole foods and good fats. It also has a lot of flexibility, so if you want to add other veggies or seasonings, you can easily make it your own. Everyone in my house thoroughly enjoyed it, and I hope you guys do too!

Quinoa Burrito Bowl

Quinoa Burrito Bowls | Serves 4 | Prep Time: 45 minutes

Ingredients

  • 2 cooked chicken breasts
  • 1 teaspoon of chili powder
  • 2 large avocados, sliced lengthwise
  • ½ pound of cherry tomatoes
  • 1 cup of dry quinoa
  • ½ cup of cooked corn kernels
  • ½ cup of black beans, drained
  • 5 cups of arugula, divided into quarters
  • 1 large red bell pepper, diced
  • 1 large green bell pepper, diced
  • ¼ cup of black olives, sliced
  • Diced jalapeno pepper, to taste
  • Sour cream, to taste
  • Olive oil to drizzle on top
  • 1 cup of plain Greek yogurt (divided up into quarter cups for each plate)
  • Salt and pepper to taste

Directions

  • Cook quinoa according to instructions. Once cooked, let it cool for five minutes and then combine in a bowl corn and black beans and set aside.
  • Shred cooked chicken breasts and season with chili powder and set aside.
  • To assemble each bowl: Start by placing quinoa mixture in one half of the bowl. On the other side, add arugula. Next, place chicken on top, followed by all other vegetables. Top with black olives and jalapenos and one quarter cup of Greek yogurt. Next, lightly drizzle olive oil over each bowl and add salt and pepper to taste.
  • Serve and enjoy!

Zucchini and Squash Bake Recipe

I’ve shared a lot of main dishes here on my site, such as slow cooker pork tenderloin and steak fajitas… And even a few cozy drink recipes like my hot apple cider. I’d say it’s about time to serve up a side dish to pair with all your fall comfort foods. It’s easy to load up on buttery biscuits and mashed potatoes this time of year, but if you’re trying to opt for something healthier, those might not be your go-to. This zucchini bake is quick and easy (only a few ingredients) and it doesn’t feel like a health food, it’s actually yummy and satisfying.

This recipe feeds two, so double or bake two for a family of four.

First, preheat the oven to 425 F.

Using a peeler, peel one zucchini and one Gold Rush squash lengthwise. Then place those slivers in a large bowl and toss with salt and pepper and 2-3 tablespoons of olive oil.

Next, line a nonstick baking pan (the dimensions of this dish are 5×7”) with alternate layers of zucchini and then squash until all slices are in dish. Bake for 20 minutes.

When the twenty minutes are almost up, shred 1/2 cup of gruyere cheese. Remove pan and sprinkle on top. Then, sprinkle 1/3 cup of panko crumbs on top of that; bake for an additional 10 minutes.

Once done, let cool and serve! Seriously the best healthy side dish ever.

One Pot Chicken with Tomatoes

You can’t deny that one-dish meals are the best. Whether it’s one pot pasta or a slow cooker recipe, minimal meals are a busy parent’s best friend. This healthy chicken and tomatoes dish is no exception, and it’s pretty easy to whip up. See below for my step-by-step and let me know if you try yourself!

Ingredients
4 boneless skinless chicken breast
1 package grape tomatoes, halved
1/3 c. low sodium chicken broth
1/4 c. balsamic vinegar
1/4 c. lemon juice
1 package organic spinach leaves
½ tsp each salt, pepper, poultry seasoning
2 cloves garlic, minced

First, season and pan fry the chicken breast, 3-4 minutes on each side. Then, transfer it to a deep sauté pan with the tomatoes, seasoning, garlic, lemon, vinegar and broth.

Bring to a boil, cover, and cook. You’ll want your tomatoes to start to soften.

Drain the broth, and prepare a plate with a bed of spinach. You can save the broth and boil with a bit of corn starch to thicken it if you want to drizzle sauce on top of your chicken.

Flank Steak with Avocado Chimichurri

June is here, and you what that means… A summer of grilling! If you’re new to preparing steak or grilling in general, this recipe is for you. The flank steak isn’t tough to figure out and prepare to your liking, and chimichurri sauce is basically tons of delicious, flavorful ingredients all mixed up together.

Flank Steak with Avocado Chimichurri

Ingredients
1 flank steak
steak seasoning

(for sauce)
2    garlic cloves, minced
½   cup parsley
½   cup cilantro
1    teaspoon oregano
½   cup olive oil
¼   cup red wine vinegar
½   teaspoon salt
¼   teaspoon red pepper flakes
1    avocado, sliced in small pieces
juice of 1 lime

Flank Steak with Avocado Chimichurri

Directions
1. Turn the grill on high. Sear both sides of seasoned steak for 1-2 minutes each. Then move it off the direct heat and grill on medium for about 4-6 more minutes.
2. Mix all sauce ingredients in a mixing bowl until they resemble a chunky sauce, distributing the seasoning throughout.
3. Spread sauce on steak and enjoy!
